Dry aging of the sirloin joint has made this a popular cut once again. The sirloin has both good marbling and a decent layer of fat for good flavour and is easy to carve.

Another visit to the farm shop. The plus side to our trips down to Addenbrookes and The Royal Papworth. Always friendly staff and I look forward to buying one of their famous pork pies when we pass by here. A traditional Butchers Shop. What is not to like about coming here?!
