Lay the pheasant in the pan, cook until golden-brown in colour (about 3-5 minutes) on the leg sides. Turn the pheasant onto its breast side to colour for a further 2-3 minutes. Season with salt and pepper; transfer to the oven and cook for 30 minutes, turning halfway through cooking time.
Picanha is a cut from Brazil, it is taken off the rump and seam butched as a single joint of meat.
Cooking suggestion:
- Simply roast as a whole piece at 200 degrees for 25 mins per 1kg.
A good pinch of sea salt and hearty grind of pepper is all that is needed.
