Gog Recipe: Kirkham’s Lancashire Welsh Rarebit
Welsh Rarebit makes a satisfying snack but it’s really something else when made with Kirkham’s Lancashire Cheese from The Gog Delicatessen. Kirkham’s Lancashire is the last farmhouse raw-milk Lancashire in the world and its buttery, light and crumbly texture makes it ideal for melting.

2 Tbsp. Tracklements Fresh Chilli Jam
Geo Organics Worcester Sauce to taste
Salt & Pepper to season

140g freshly grated Kirkham’s Lancashire Cheese
2 large Egg Yolks
150g Neal’s Yard Creamery Organic Crème Fraîche
4 x 2cm thick slices of good quality bread
From your Larder
1 Tsp. English Mustard Powder
Method
1. Preheat the grill
2. Whisk the egg yolks with the crème fraîche and mustard powder
3. Stir in the cheese and season with salt and pepper
4. Lightly toast the bread then spread the chilli jam to the edges of each slice
5. Add the rarebit mixture on top of the chilli jam, again to the edges to prevent the crusts from burning
6. Grill until the the mixture has melted and is bubbling then add a drizzle of worcester sauce to taste
