Cheese of the Season: Vacherin Mont D’Or
Only available in the winter months, Vacherin Mont D’Or is an absolute essential at Christmas!
Its full and creamy flavour, paired with its melting and voluptuous texture makes it a wonderfully satisfying indulgence on a cold winter’s evening.
Vacherin is made on the Swiss side of the Jura Mountains from the pasteurised milk of the Montbeliarde cow. Not only does its circular spruce box help maintain the shape of the almost-liquid cheese interior but it adds to the sweet but piney undertones in the flavour. In fact, the cheese is initially wrapped in slices of hand cut spruce bark and later matured on spruce shelves. Our Vacherin, from Mons Cheesemongers, is matured in the Mons caves. The cheese is truly cared for at this stage whilst it’s finished and washed in their rind rooms.
An ideal cheese for sharing, Vacherin Mont D’Or can be enjoyed at room temperature and traditionally eaten with a spoon or baked in its box. Serve it fondue-style with warm new potatoes or crusty bread and a chilled glass of champagne.
